This is my daughter’s all-time favorite food and since today is her birthday, I’ll be making Caramelized Carrot Risotto for dinner tonight. It’s a twist on a basic risotto recipe, pumped-up with heavenly caramelized carrots. The carrots are so good, you could make them on their own and serve for a side dish to any dinner. We always pluck a few from the pan and savor them on their own. Then, just add them to risotto, broth, wine and Parmesan cheese and well, you have a very happy belly.

I was waiting for another recipe from you, BUT, this is waaaay too difficult for me! I had no idea what went into making rissotto. I’m used the the ones that come in a box.

I know, this one has a lot of steps to it, but it’s truly worth it. My daughter asks for it all the time. Definitely comfort food.
Next time, I’ll put up a less involved recipe. I know after a long day, I usually just want to eat already!
