When I have the time, I love to cook. For me it’s a way to express creativity, do something with my hands and unplug from gadgets. Then we get to eat it! I’m by no means a gourmet, so you can rest assured that if I can pull off a recipe, anyone can. Also, many of the cookbooks I use, I get from the library. It’s a fantastic way to try, before you buy.
Rustic Potato and Greens Pie
We went to the Boulder Farmer’s Market last weekend and I bought a huge bag of spinach. After a few salads, I needed to find a use for the rest of it. This rustic pie is a mixture of mashed potatoes, onions, garlic, spinach, ricotta cheese, Gruyère, Parmesan, a bit of egg and a dash of nutmeg. Using a store-bought pastry, I filled it up and folded the edges over. The pie is very dense, satisfying and smells delicious. Want to try it? Click here for the full recipe.
